If you go too much bigger, your truck will probably be the slowest thing on the planet. I don't know how new your truck is, but with my 96 4-banger, I put 235/75/15 on it verses the factory 215/70/14 and it couldn't get out of its own way. But since you have 16 inch rims, I am assuming you have a newer truck with the more powerful 4-cylinder so it probably won't be as bad. I would probably go with a 31/10.5 if it was me. For tires, you can't go wrong with the BFG all-terrain. The Toyo Open Country A/T is a pretty good tire too. I would highly recommend the Goodyear Wrangler Duratrac, but by the sounds of what you want, they are probably too aggressive.
